Whole wheat papdi

Whole wheat papdi made with the combination of wheat flour and semolina is the core ingredient of many of the indian chaat recipes.

Ingredients
  

  • 2 Cup whole wheat flour
  • 1/4 cup semolina/suji
  • 1 tsp salt
  • 1 tsp carom seeds/ajwain
  • 2 tbsp oil
  • Water as per need.

Instructions
 

  • Add all the ingredients except water in a bowl.
  • Mix them without adding water.
  • Hold the flour in your fist. If it is binding, then it's perfect otherwise need to add little oil.
  • Knead a tight dough using water.
  • Cover the dough with moist kitchen cloth and rest for 10 minutes.
  • Take a piece of dough and roll it like we roll rotis.
  • Prick all over the rolled dough using fork. This step is important to prevent papdis from turning fluffy while frying.
  • Take a round cookie cutter or some small katori or glass and mark round cuts in rolled dough.
  • Deep fry small rounds in hot oil till turn golden brown.
  • Take them out on paper napkin and let turn completely cool. It's ready.

STORAGE

  • Only when they turn cool completely, transfer in an airtight jar. If you lock them in a jar while hot, they will turn soggy.

Notes

Papdi is used in making chats. If you are making them for the same purpose, then the given quantity of salt is fine. But papdi can be eaten as it is with a cup of tea. If you don't have plans to make it for chaat, add little more salt.
