Besan dhokla without eno is a simple and easy recipe when the prime ingredient ENO is not available with you.

Ingredients
  

FOR BATTER

  • 1 cup gram flour/besan
  • 2 tbsp semolina/suji
  • 1 cup yogurt/dahi
  • 1/2 tbsp sugar
  • 1/4 tsp turmeric/haldi
  • 1/2 tbsp baking powder
  • 1/4 tsp baking soda
  • 1 tbsp chilli sauce
  • 1 tbsp lemon juice
  • 1 tbsp oil + for greasing
  • Salt to taste
  • 1 cup water

FOR TEMPERING

  • 1 tbsp mustard seeds
  • 5-7 curry leaves
  • 2 green chillies
  • 1 tbsp oil
  • 1/4 cup water

Instructions
 

MAKING OF BATTER

  • In a bowl add besan and semolina.
  • Then add turmeric, sugar, yogurt, green chilli sauce, lemon juice and oil.
  • Add water and whisk it to a smooth batter.
  • Cover the bowl with a lid and let it rest for 30 minutes.
  • Grease a bowl with oil and keep aside.
  • Now add salt, baking powder and baking soda.
  • Whisk the batter and make sure there remain no lumps.
  • Pour the batter in greased bowl.
  • Steam for 30 minutes or until dhokla is perfectly cooked. To check it, insert a toothpick and if it comes out clean, dhokla is ready.
  • Let dhokla turn completely cool.
  • Invert it into a plate after running knife on the edges of corner of dhokla.
  • Cut dhokla is required pieces.

MAKING OF TEMPERING.

  • Add oil in a tadka pan.
  • Add mustard seeds and let them splutter.
  • Add green chillies, curry leaves. Roast for few seconds.
  • Add water.
  • Now pour this mixture over the dhokla.
  • Sprinkle some coriander leaves.
  • Enjoy with coriander chutney after turning it cool in refrigerator.

Notes

Remember, baking soda, baking powder and salt are to be added only after 30 minutes time of resting is over and immediately before you are putting the batter for steaming.
