Bread without yeast and curd recipe is the instant version of bread recipe which also requires no knead and no time to keep for fermentation.

Ingredients
  

FOR MAKING BUTTERMILK

  • 1 cup + 2 tbsp milk room temp
  • 1.25 tbsp vinegar or lemon juice

FOR PREPARATION OF DOUGH

  • Buttermilk recently prepared
  • 2 cup all purpose flour/maida
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1.5 tbsp milk powder optional
  • 1/2 tsp salt
  • 1 tsp sugar
  • 2 tbsp oil + for greasing

MAKING OF BUTTERMILK

  • Take milk in a glass and add vinegar in it. You can add lemon juice too. Milk must be at room temperature.
  • Slightly mix and keep aside for 10 minutes. Don't move the glass and let it remain idle.

MAKING OF DOUGH

  • Place a sieve over a bowl and put all purpose flour, baking soda & baking powder in it.
  • Sieve them into a bowl.
  • Add salt, sugar, milk powder and oil in it.
  • Mix everything well.
  • By now, the milk must have become buttermilk. By slowly adding buttermilk, keep on mixing dough.
  • No need the knead the dough. Only keep mixing so that buttermilk gets Incorporated well. You will have a very sticky dough.
  • Grease loaf pan and transfer dough in it.
  • Level the dough with spatula.
  • Brush oil over the dough.
  • Put the loaf pan in pre-heated oven and first bake @ 180℃ for 30 minutes and when 30 minutes are complete, for further 30 minutes on reducing the temperature to 160℃. In all, bake @180℃ for first 30 minutes and @160℃ for another 30 minutes which comes to total 60 minutes of baking time. However this time may vary depending on oven to oven. So need to keep an eye on bread during the last minutes of baking.
  • When the bread turns golden brown, bring it out of oven and brush with melted butter to give a nice shine and glaze to bread.
  • By running the knife on the edges of bread, take the bread out of loaf pan while bread is still hot.
  • Let bread turn cool completely. Cut into thin pieces and use.

Notes

1. If you are already having buttermilk, then you need not to go through the buttermilk making process. Use the one you have.
2. Buttermilk is also made by diluting curd. Add little amount of water in curd & wisk. You can use it safely.
3. Maida/all purpose flour can be replaced with atta/whole wheat flour. But bread made of atta will be quite dense and heavy.
4. You can use both atta and maida in equal quantity i.e. 1 cup atta, 1 cup maida.
5. Milk powder is shown as optional but it is highly recommended because it will give good texture to your bread.
6. If you don't have particular loaf pan designed to make breads, use any rectangular cake tin. If don't have such too, use any cake tin you have. Though you will not get the proper shape of bread, but hardly matters if you love homemade bread.
7. You can half or double the quantity of ingredients as per your need.
