Eggless pear and apple cobbler is apie made of fruit with rich biscuit dough usually only on top of the fruit.

Ingredients
  

FOR BASE

  • 1.5  cup pear cut into small pieces
  • 1.5  cup apple cut into small pieces
  • 1/2 cup sugar
  • 2 tbsp walnuts optional
  • 1/2 tsp cinnamon powder

FOR BATTER

  • 1 cup All purpose flour/Maida
  • 100  grams butter or vegan butter
  • 1/2 cup powdered sugar
  • 1/4 tsp nutmeg powder
  • 1 tsp mix fruit essence or vanilla essence
  • 3 tbsp curd/yogurt avoid, if vegan
  • 1/2 cup Milk almond/soy milk, if vegan
  • Salt a pinch
  • 1 tsp baking powder

FOR TOPPING

  • 1 tbsp Sugar
  • 1/2 tsp Cinnamon powder

ADDITIONAL

  • Water as per need
  • Juice of half lemon

Instructions
 

  • Add pieces of pear and apple in a big bowl and pour clean water sufficient enough to cover them. Squeeze half lemon in it and mix. It will prevent the fruits from changing their colour, most particularly apples. Keep aside.
  • Now begin with making of batter. Take another bowl and add butter and powdered sugar in it.
  • Mix it so that sugar incorporates in butter and both turns creamy. No need to whip the butter, just mix both.
  • Add curd (avoid, if vegan), nutmeg powder and mix fruit essence. Add vanilla essence if fruit essence is unavailable. Mix.
  • Place a sieve over the bowl and add all purpose flour, baking powder and salt in it.
  • Sieve it to the bowl & mix everything.
  • Add milk but slowly and keep mixing. Add the milk only as much as needed to make the batter runny although thick. We needed to add half cup of milk. But if you are vegan, hence not adding yogurt, then you may need to add extra milk than what we added. Your batter is ready. Keep it aside.
  • It's a time to arrange layers of cobbler. Drain water from the fruits (pear & apple) and add walnuts, sugar and cinnamon powder in it. Mix.
  • Take a cake tin or baking dish & transfer fruits in it. Evenly spread the fruits over the base of the tin.
  • Now pour the batter all over the fruits by slowly moving the bowl of batter.
  • Spread the batter so that it covers the entire fruit base.
  • Sprinkle sugar and cinnamon powder on the top.
  • Tap the cake tin so that air releases, if any, and transfer the cake tin in a pre-heated oven @180°C for 45 to 50 minutes or until golden brown.
  • Your eggless pear & apple cobbler is ready. Cut a piece of cobbler with knife from the side of the tin & place in a serving plate. It is usually served warm, either as it is or with vanilla ice cream or whipped cream. However some love it cool.
