Sarrata is a popular drink from the State of Uttar Pradesh, India made from buttermilk, minimal spices and red chilli powder in particular. A tadka is given to it in a small earthen pot, which brings an earthy flavour to the drink.

- 1 cup curd (preferably very sour)
- 1 cup water
- Salt to taste
- 1 tsp red chilli powder
- 1 tbsp coriander leaves
- 1 tsp mint leaves (dry or fresh)
- 3/4 cup boondi
FOR TADKA
- 1 tbsp mustard oil
- 1 tsp cumin seeds
- 1/8 tsp hing/asafoetida
Take 1 cup curd in a bowl and whisk well.
Add 1 cup water and whisk together well to make it like a buttermilk consistency.
Add salt to taste, 1 tsp red chilli powder, 1 tbsp coriander leaves, 1 tsp mint leaves (dry or fresh) and 3/4 cup boondi.
Mix well.
For tadka, place an earthen lamp/mitti ka diya on gas stove.
Let the diya heat up to such an extent that it begins to turn extremely hot.
Add 1 tbsp mustard oil and heat the oil.
Lastly add 1 tsp cumin seeds and 1/8 tsp hing.
Let cumin splitter and turn deep brown.
Pick the hot diya with utensil holder and put inside the curd.
Immediately put a lid and let it remain for 5 minutes.
Remove the diya.
Mix well and sarrata recipe is ready. Serve chilled.
- If you already have sour buttermilk, no need of curd and water.
- You can enhance the quantity of red chilli powder as per your bearability.
