Eggless Cashew cake recipe

Rich and delicious cake made using cashews, whole wheat flour and without eggs is such a lovely tea time treat that you would love to try with all your heart.

Ingredients
  

1 cup = 200 ml

  • 2 cup whole wheat flour (294 gram)
  • 1 cup sugar of your choice (220 gram - we used bura sugar)
  • 1/2 cup milk powder (72 gram)
  • 1/2 cup cashews (68 gram)
  • 1 cup yoghurt/curd (240 gram)
  • 1/2 cup oil (100 ml)
  • 1/2 cup milk (100 ml)
  • 1 tsp baking soda
  • 2 tsp baking powder
  • Pinch of salt
  • 1 tsp vanilla essence
  • 15-20 cashews for decoration

Instructions
 

  • Add curd, oil, milk and sugar in a bowl.
  • Mix well.
  • Put a sieve on the bowl and add flour, baking soda, baking powder and salt.
  • Sift into the bowl.
  • Grind cashews in a blender and make a powder.
  • Add cashew powder & milk powder into the bowl.
  • Also add vanilla essence and mix.
  • Pour the batter into a greased cake tin.
  • Decorate the batter with cashews.
  • Bake in a pre-heated oven @180°C for 40-45 minutes in the middle rack of the oven with both the rods.
  • Once done, take the cake out and Invert when cool completely.
  • Enjoy.
