Eggless Cashew cake recipe

Rich and delicious cake made using cashews, whole wheat flour and without eggs is such a lovely tea time treat that you would love to try with all your heart.

1 cup = 200 ml
- 2 cup whole wheat flour (294 gram)
- 1 cup sugar of your choice (220 gram - we used bura sugar)
- 1/2 cup milk powder (72 gram)
- 1/2 cup cashews (68 gram)
- 1 cup yoghurt/curd (240 gram)
- 1/2 cup oil (100 ml)
- 1/2 cup milk (100 ml)
- 1 tsp baking soda
- 2 tsp baking powder
- Pinch of salt
- 1 tsp vanilla essence
- 15-20 cashews for decoration
Add curd, oil, milk and sugar in a bowl.
Mix well.
Put a sieve on the bowl and add flour, baking soda, baking powder and salt.
Sift into the bowl.
Grind cashews in a blender and make a powder.
Add cashew powder & milk powder into the bowl.
Also add vanilla essence and mix.
Pour the batter into a greased cake tin.
Decorate the batter with cashews.
Bake in a pre-heated oven @180°C for 40-45 minutes in the middle rack of the oven with both the rods.
Once done, take the cake out and Invert when cool completely.
