Wash the potatoes very well. As we are using potatoes with skin, so they need to be washed extremely well by rubbing all around so that there remains no dust or sand stick to them.
Grate the potatoes.
Then grate the ginger also.
Add all the other ingredients except oil i.e. carom seeds, red chilli powder, turmeric powder, coriander powder, garam masala, dry mango powder, corn flour/corn starch and salt.
Mix them so well.
Take a non stick pan and add 1 tbsp of oil in it.
Put handful of the potato mixture and spread all over the pan.
You may use some katori to press the potatoes so that they remain equally spread.
Also line the edges so that cheela remains round in shape.
Let them cook underneath on low heat until it is done from one side.
Very carefully, turn the down side up and cook from other side too.
When the potato mixture turns brown from both the sides, take it out.
Aloo ka cheela is ready.
