Add oil in a pressure cooker. If using mustard oil, then it needs to be cooked till smoking point.
Then add cumin, turmeric powder, red chilli powder and coriander powder. Make sure oil is not too hot while adding spices otherwise they will burn quickly.
Add tomatoes, green chili and ginger in a grinder jar.
Make a puree and add it to the cooker. Also add coriander powder and salt because salt fastens the pace of tomatoes cooking.
Cook by stirring at intervals for 5-7 minutes or until tomatoes begin to leave the sides of cooker.
Whisk curd, gram flour and water in a bowl and add to the cooker by stirring simultaneously, otherwise curd may curdle.
When curd begins to boil, add gatte.
Close the lid of pressure cooker and let them cook upto 3 whistles.
Open the lid when pressure is released and add garam masala and coriander leaves. Mix. Besan ke Gatte are ready. Enjoy.
