Cubes of paneer/Indian cottage cheese marinated in delicious sauce, then deep fried and lastly sauted in spices makes a tongue tickling, soft and juicy from within and crispy from outside starter/appetizer, called Paneer 65.

Ingredients
  

FOR MARINATION

  • 250 gram paneer/Indian cottage cheese (cut into cubes)
  • 2 tbsp curd/yoghurt
  • 2 tbsp rice flour
  • 2 tbsp corn flour/corn starch
  • 1 tbsp ginger garlic paste
  • 7-8 curry leaves (crushed)
  • 1 tsp kasuri methi/dry Fenugreek leaves
  • 1 tsp garam masala
  • 1 tbsp coriander powder
  • 1/2 tsp cumin powder
  • Red chilli powder to taste
  • 1/4 tsp turmeric powder
  • 1 tbsp Lemon juice
  • 1 tbsp coriander leaves
  • Water as required

FOR AIR FRYING

  • Marinated paneer
  • Oil for brushing

FOR TEMPERING

  • 2 tsp oil
  • 1/2 tsp cumin seeds
  • 1 tsp ginger garlic paste
  • 2 green chilies or dry red chilies
  • 5-7 curry leaves
  • Pinch of Salt
  • 1 tbsp coriander leaves

Instructions
 

  • Take a bowl and add all the ingredients mentioned under the head "FOR MARINATION" in the list of ingredients, except paneer and water. Give it a good mix.
  • Add water and make a thick paste by whisking it well.
  • Add paneer cubes and mix them well so that they get coated so well.
  • Rest them for 20-30 minutes in refrigerator.

FOR AIR FRYING

  • Brush the air fryer basket with oil and arrange paneer cubes in it. Make sure cubes should get coated very well.
  • Air fry @170°C/338°F for 20 minutes. However in the half time, open the basket, brush the paneer cubes with oil, turn their sides and then continue with the frying. Alternatively you can deep fry or bake paneer cubes.
  • Once done, take the basket out and keep the paneer aside.

FOR TEMPERING

  • Take a pan and add oil, cumin seeds, chillies, ginger garlic paste, curry leaves and salt. Don't forget the you have already added salt in marination.
  • Just saute for couple of seconds as you are not required to brown everything.
  • Add in fried paneer cubes and toss well.
  • Put some coriander leaves for garnish and enjoy with the dip of your choice.
