Cashew pulao, also called by the name Kaju Pulao is a Vegan and gluten-free rice recipe which gets ready in no time with the handful of ingredients.

Ingredients
1 CUP = 200 ml

cooked rice
25-30
cashews
roasted/cut into halves
1/4
cup
onion barista/fried onions
1
bay leaf
2
green chillies
1
tsp
ginger
grated
2
green cardamoms
2
cloves
1
inch
piece of cinnamon
Salt to taste

Oil

tbsp
coriander leaves/cilantro
Instructions
We already had roasted cashews and onion barista. If you don't have them, make first both and keep aside. Click here for the recipe of onion barista.
Take a pan & add oil.
Add bay leaf, green chillies, cardamoms, cloves, cinnamon and ginger paste. Saute till ginger turns slightly brown.
Add cooked rice, salt, onion barista and cashews. Mix well without breaking the rice.
Cover the pan with a lid and let simmer for 2 minutes on low heat.
Cashew pulao is ready.
Serve warm after garnishing with more cashews, onion barista and fresh coriander leaves/cilantro.
Notes
You can make this pulao with the freshly made rice also.
