Suji Ka Halwa is an Indian sweet dish made with Primarily 4 ingredients i.e. semolina (suji/rava), desi ghee, sugar, and water.

Ingredients
  

1 cup = 200 ml

  • 1/2 cup Suji/semolina 92g
  • 1/2 cup desi ghee 100ml melted
  • 3/4 cup Sugar 180g
  • 1 tbsp almonds chopped
  • 1 tbsp cashews chopped
  • 1 tbsp coconut cut into small pieces
  • 1 tbsp raisins
  • 3-4 green cardamoms crushed
  • 1.5 cup warm water 300ml
  • 2 tbsp milk
  • Few strands of saffron

Instructions
 

  • Add 2 tbsp of milk in a microwave safe small glass bowl and microwave for 30 seconds on high power. Our microwave has high powder of 900 and remember, entire recipe will be made on high power till the end.
  • Add few strands of saffron, mix and keep aside.
  • Take a big microwave safe glass bowl and add suji in it.
  • Microwave for 2 minutes.
  • Give it a stir.
  • Again microwave for 2 minutes, then stir, microwave 2 minutes, stir, microwave 1 minute and stir. From beginning to end, we have microwaved suji for total 7 minutes and in 4 parts.
  • While suji is getting microwaved, it will keep on changing its colour from white to light brown. Also it will stick to the bottom of bowl but no issues. Just scrap it using wooden spatula.
  • After 7 minutes of roasting, add melted desi ghee in suji.
  • Mix well.
  • Microwave for 2 minutes.
  • Then add almonds, cashews and coconut. But DON'T add raisins yet, otherwise they will begin to burst.
  • Mix them well.
  • Microwave for 2 minutes, stir, again microwave for 1 minute and stir.
  • Now add sugar, cardamoms, saffron soaked milk, raisins and warm water. Remember, water has to be warm only otherwise with cold water, your bowl may receive cracks.
  • Give them a good mix.
  • Microwave for 3 minutes, stir, microwave 2 minutes and stir.
  • Your suji ka halwa in microwave is ready. Enjoy warm.

Notes

  1. Suji is dry microwaved/roasted for 7 minutes, in desi ghee for 5 minutes and 4 minutes after adding water.
  2. You may roast suji for more time if likes halwa of dark colour.
  3. Roasting and cooking time may vary depending on quantity of ingredients and high power of your microwave. Its already mentioned that over oven's high power is 900.
  4. For the accurate ratio, measure the ghee only after melting it.
  5. If don't have saffron, then skip the milk and saffron part.
  6. Instead of saffron, you can add pinch of yellow food colour or even can totally skip colouring halwa.
