Raw Mango rice recipe

Vegan, gluten-free and one pot meal, raw mango rice are made using green mangoes, basic spices and steamed rice.

Ingredients
  

  • 2 tbsp Oil
  • 1/8 tsp asafoetida
  • 1 tsp Mustard seeds
  • 1 tsp ginger grated
  • 1 tsp chana dal
  • 1 tsp urad dal
  • 2 green chilies slit lengthwise
  • 1 dry red chili (break
  • 8-10 curry leaves
  • 2 tbsp peanuts
  • 2 tbsp coconut grated or dessicated
  • 1/4 tsp turmeric powder
  • Salt to taste
  • 3/4 cup Raw Mango grated
  • 3 cups Cooked rice

Instructions
 

  • Take oil in a pan and add asafoetida and mustard seeds. Let seeds crackle.
  • Add ginger, chana dal, urad dal, dry red chili and green chilies.
  • Saute till ginger turns slightly brown, so as daals.
  • Add curry leaves and saute for couple of seconds.
  • Then add Coconut and peanuts.
  • Saute them till they turn brown and aromatic.
  • Add mangoes and cook them for 2-3 minutes.
  • Put some turmeric.
  • Then add rice and salt.
  • Mix them well so that everything incorporates well.
  • Raw Mango rice are ready.
  • Enjoy hot or warm.

Notes

  1. Rice must be completely cool when using to make this recipe. Hot rice may turn mushy while cooking.
  2. You can add fresh grated coconut or desiccated coconut too.
