Vegan, Glutenfree and one pot recipe, Stir fry cabbage and peas is a simple, easy and delicious dry sabji made with green cabbage and green peas.

Ingredients
  

1 cup = 200 ml

  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1 tsp ginger garlic paste
  • 1 green chilli
  • 1 onion sliced
  • 1/2 cup tomato puree
  • 1/2 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 1 tbsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • 1 tbsp fennel powder
  • 4 cup cabbage shredded
  • 2 cup green peas fresh or frozen
  • 1/2 cup water or as needed
  • 1 tbsp coriander leaves/cilantro

Instructions
 

CABBAGE AND PEAS STIR FRY IN PAN

  • Take oil in a pan and add cumin seeds, ginger garlic paste and green chilli. Saute till ginger garlic paste turns slightly brown.
  • Add onion and saute till onion turns brown.
  • Add turmeric powder, red chilli powder, coriander powder, garam masala and salt (see notes below). Mix
  • Pour in tomato puree and cook till tomatoes begin to release oil.
  • Add cabbage, green peas and water (see notes).
  • Cover the pan with a lid and let them cook. Keep stirring at intervals.
  • In 15 to 20 minutes, when the peas turn soft enough to eat, add fennel powder and coriander leaves. Mix
  • Cover the pan again and simmer for a minute.
  • Cabbage and green peas stir fry is ready.

CABBAGE AND PEAS STIR FRY IN INSTANT POT

  • Press the saute button and add oil.
  • Add cumin, ginger garlic paste, onion and green chilli. Saute for 2-3 minutes until onion turns brown.
  • Add tomato puree and cook for a minute.
  • Now add shredded cabbage, peas and spices.
  • Add the water and give everything a good mix.
  • Secure the lid, close the pressure valve and cook for 3 minutes at high pressure.
  • Open the valve to quick release any remaining pressure.
  • Mix well, garnish with coriander leaves/cilantro and serve.

Notes

Raw shredded cabbage looks huge in quantity but reduces after cooking. So be vigilant while adding salt and don't go by the cabbage quantity. Salt can always be adjusted later.
Very less water needs to be added because cabbage too has a good amount of water, which it releases while cooking due to steam.
If at any stage you feel that there's no water left and Vegetables are still uncooked, bit of more water can be added.
