Ingredients
  

1 cup = 200 ml

  • 1 cup rice
  • 3/4 cup corns
  • 1 tbsp ginger grated
  • 1 onion cut into strips
  • 1 bay leaf
  • 2 green chilies
  • 1 tsp cumin seeds
  • 1 black cardamom
  • 2 green cardamom
  • 2 cloves
  • 1 star anise
  • Small piece of cinnamon
  • 1/8 tsp nutmeg
  • 1 tbsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • 2 cup water
  • 1 tbsp fresh coriander/cilantro to garnish

Instructions
 

  • Wash rice very well till the water is clear and soak them for atleast 30 minutes.
  • Add oil in a pressure cooker and add bay leaf, cumin seeds, black cardamom, cloves, green cardamom, star anise, cinnamon and nutmeg. Saute for couple of seconds until cumin splutter.
  • Add ginger and green chili. Saute till ginger turns golden brown.
  • Add coriander powder and garam masala. Mix.
  • Add onion.
  • Don't let onion turn brown and cook till it becomes pink and translucent.
  • Add corns and saute for a minute.
  • Drain water from rice and add rice in pressure cooker.
  • Pour water and add salt. Mix.
  • Pressure cook for 2 whistles.
  • Open the lid once all pressure releases from cooker.
  • Corn rice are ready.
  • Enjoy warm after garnishing with fresh coriander/cilantro.
