Mint rice recipe is a vegan, gluten free and one pot meal aromatic & flavourful south indian recipe made in a simple way using regular ingredients.

FOR MINT PASTE
- Handful of mint leaves
- 3 cloves
- 1 inch ginger
- 1 star anise
- 2 green chillies
- 2 pod cardamom
- 3 cloves
- A piece of cinnamon
- 1/2 tsp whole black pepper
- A piece of mace/Jayatri
- 1/4 tsp nutmeg/supari
- 2 tbsp water
FOR MINT RICE
- Mint paste already prepared
- 1 cup basmati rice
- 2 tbsp oil
- 1 bay leaf
- 1 tsp cumin seeds
- 1 big onion
- 8-10 cashews
- Salt to taste
- 2 cup water
MAKING OF MINT RICE
Add oil in pressure cooker.
Add bay leaf and cumin seeds. Let seeds splutter.
Put cashews in oil and roast them till turn light golden.
Add onion and saute till turns golden brown.
Pour in the mint paste and let it cook for about 2 minutes until it cooks and absorbs well.
Add rice in pressure cooker. The rice should have been washed and soaked for about 20 minutes before using.
Add salt and water and mix.
Put the lid of pressure cooker on and let it blow 2 whistles.
When the pressure from cooker releases, open the lid.
Mint rice are ready. Enjoy warm with curd or the way you love to.
