Mint rice recipe is a vegan, gluten free and one pot meal aromatic & flavourful south indian recipe made in a simple way using regular ingredients.

Ingredients
  

FOR MINT PASTE

  • Handful of mint leaves
  • 3 cloves
  • 1 inch ginger
  • 1 star anise
  • 2 green chillies
  • 2 pod cardamom
  • 3 cloves
  • A piece of cinnamon
  • 1/2 tsp whole black pepper
  • A piece of mace/Jayatri
  • 1/4 tsp nutmeg/supari
  • 2 tbsp water

FOR MINT RICE

  • Mint paste already prepared
  • 1 cup basmati rice
  • 2 tbsp oil
  • 1 bay leaf
  • 1 tsp cumin seeds
  • 1 big onion
  • 8-10 cashews
  • Salt to taste
  • 2 cup water

Instructions
 

  • MAKING OF MINT PASTE
  • Take a blender and add all the ingredients mentioned under the head "FOR MINT PASTE".
  • Grind to a fine paste. Keep aside.

MAKING OF MINT RICE

  • Add oil in pressure cooker.
  • Add bay leaf and cumin seeds. Let seeds splutter.
  • Put cashews in oil and roast them till turn light golden.
  • Add onion and saute till turns golden brown.
  • Pour in the mint paste and let it cook for about 2 minutes until it cooks and absorbs well.
  • Add rice in pressure cooker. The rice should have been washed and soaked for about 20 minutes before using.
  • Add salt and water and mix.
  • Put the lid of pressure cooker on and let it blow 2 whistles.
  • When the pressure from cooker releases, open the lid.
  • Mint rice are ready. Enjoy warm with curd or the way you love to.
