Vegan banana walnut cake recipe is such a delicious and mouthwatering cake recipe made with easy process and basic ingredients. as the word ‘vegan’ is mentioned in the name of the cake, so it is clear that this is not just eggless but free from dairy products like milk, yoghurt/curd, butter and condensed milk.

This cake can also be seen as a salvager for the bananas getting ripened. this is a common problem and asked time and again that how to use ripen bananas.

Banana is the only fruit who has a very short span of life and they start decaying so early. more the ripen, more the tastier your cake will be.

This time we had 6 bananas and all were ripened so decided to make this banana walnut cake recipe but last time we had a combo of mix bananas. meaning thereby, few were ripened & some were stable.

Using both kind of bananas, we had prepared a very lovely cake recipe named banana upside down cake. do visit the same to cherish the visual treat & do try if you are in such a situation with regard to bananas you have.

coming back to the present banana walnut cake recipe, it I made using whole wheat flour only and as a result this cake is much healthier. also no dairy products are used in making it so you can call it vegan banana walnut cake also.

While reading this recipe of whole wheat flour banana walnut cake, two important points which might have attracted your attention. One, why walnuts were dusted with flour before adding to batter & second, why not to over do the the mixing process?

one, walnuts are dusted in flour because this way they will not sink in the batter & will spread uniformly in the cake. yes, and do note, this tip is not applicable only in case of this recipe of whole wheat banana walnut cake but to all the cake recipes in which you are adding anything additional. like tutti fruity or choco chips or almonds or raisins or whatever. always add such Ingredient after dusting in the flour.

second, don’t overdo the mixing process because this way gluten is formed in the batter and the cake will not be light and fluffy. rather you will find the cake sticky, raw & tight, especially from the center. although this cake is not raw actually, but it gives such a taste as if it is under baked.

….so do take note of above two mentioned points while you are baking any of the cake recipe.

Also, there is a point about toothpick test. all those persons who have ever baked any cake must be aware about this point because every cake goes through the toothpick test.

Here making it clear to those who are not aware about this test.  when the cake has completed it baking time in the oven and look to be baked properly from outside, by way of this test, we check the done-ness of the cake from inside with the help of a toothpick.

Insert a toothpick in the cake and if the toothpick comes out clean, your cake is properly baked from inside too. but the some cake batter sticks to the toothpick on inserting, means cake need more time to bake, approximately for few more minutes.

Also, you need not to be much particular about the quantity of walnuts.

If you have less or more in quantity, you can use them. this whole wheat banana walnut cake can be made even without adding walnuts or alternatively with other nuts, like, almonds, cashews, pistachios or raisins.

You can add these nuts in addition to walnuts too. it is germane to point out here that banana cakes are usually coupled with walnuts because both together bring a unique flavor to the cake. listen to your heart.

Stepwise pictorial recipe of whole wheat banana walnut cake

 

1. crack walnuts to the number so that they become 1 cup. we had to crack 11 walnuts for the said measurement. keep aside.

2. out of 1 cup of walnuts, separate 1/4 cup of walnuts in some small bowl and add 1 tbsp of wheat flour over them. mix so that whole wheat coats well to walnuts. keep aside.

3. take a bowl and add bananas in it. we are using 5 because these are small in size. add 4 if using big one.

4. mash them well with the help of a fork. use blender if you like.

5. add sugar and oil.

6. mix well so that everything assemble together.

7. place a sieve over the bowl.

8. in the sieve, add 1.5 cup of whole wheat flour, baking soda, baking powder, salt and cinnamon.

9. sieve them to the bowl.

10. now with the help of a spatula, mix the mixture lightly.

11. when the batter is slightly mixed, add vanilla essence and 1/4th cup of walnuts (dusted with flour) to the batter and mix it. but don’t over mixing.

12. grease the baking tin with oil.

13. transfer the batter into the tin and level the upper surface with spatula.

14. spread the rest of the walnuts (3/4 cup) over the top of batter.

15. tap the cake tin to release air bubbles.

16. bake in the preheated oven @180°C for 55 to 60 minutes. the cake must be having a golden brown crust and should pass the toothpick test.

17. take the cake tin out from the oven & place it on cooling rack. once cool, invert the cake in a plate.

 

your whole wheat banana walnut cake is ready. cut into slices & enjoy either as it is with tea or coffee. also, you can cherish this cake with whipped cream or ice cream. if asked in particular, vanilla ice cream makes a best pair with this vegan banana walnut cake.

  1. You can skip whole wheat flour & make this cake with all purpose flour too. Or can use both in the equal ratio.
  2. Cinnamon powder is optional but it’s presence brings a zesty touch to the cake. to make the cake more barmy, you can add 1/8 of nutmeg powder too along with cinnamon powder.

Whole wheat banana walnut cake is one of best and easy eggless cake recipe to utilize bananas getting ripened. 

1 cup = 200 ml

  • 1.5 cup whole wheat flour / atta ((plus 1 tbsp extra for dusting))
  • 5 bananas ((ripe to over ripe))
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • a pinch salt
  • 1/8 tbsp cinnamon powder ((optional))
  • 1/2 cup sugar
  • 1 tsp vanilla essence
  • 2/3 cup oil
  • 1 cup Walnuts
  1. take a bowl and add bananas in it.

  2. mash them well with the help of a fork.

  3. add sugar and oil and mix well so that everything assembles together very well.

  4. sieve 1.5 cup of whole wheat flour, baking soda, baking powder, salt and cinnamon.

  5. with the help of a spatula, mix the mixture lightly.

    Hi Payal would appreciate if you give the measures in gm too. All my measuring cups are 250ml and the measurements of all your ingredients are in accordance to 200ml cup. In the banana walnut cake 5 bananas are mentioned (small/big) assuming you used small ones. Sometimes even the big ones are not so big probably medium so how do I conclude do I keep aside a little mashed bananas and see the consistency? Pl clarify the doubts as there’s no other liquid added except for oil.

      Yes, i understand that this is difficult to make a cake when you don’t have the exact measurements. For quite a long time, i am adding the recipe of cakes with measurements but the present one is the old recipe of the time when i didn’t have measuring scale. As you have a major issue with the banana, yes you are right. Keep some mashed bananas in the reserve and keep on checking the consistency of your cake batter. Once you are satisfied with the consistency, baked it. Thanks
