Ingredients
  

1 Cup = 240 ml

    FOR MAKING CAKE

    • 1 Cup Semolina / Suji / Rava
    • 1 Cup Dessicated coconut
    • 1 Cup All purpose flour / Maida
    • 1 Cup Sugar
    • 1 Cup Curd
    • 1 Cup Milk
    • 1 Cup Oil
    • 2 tsp Baking powder
    • 1 tsp Baking soda

    FOR ICING

    • 2/3 Cup Sugar
    • 2 tbsp Dessicated coconut
    • Milk as per need
    • Dessicated coconut for garnishing

    Instructions
     

    PREPARATION OF CAKE

    • take a bowl and add all the ingredients.
    • mix using cut & fold method.
    • take a cake tin & grease it with oil.
      pour cake batter into the tin.
    • bake in a pre-heated oven @190°C for 35-40 minutes. Check the done-ness of cake by inserting toothpick or knife in it. If toothpick comes out clear, your egg less Semolina coconut cake is ready.
    • Place the cake tin on cooling rack and after sometime, invert the cake very carefully.

    MAKING OF ICING

    • Take 2/3 cup of sugar and add into a grinder.
    • Grind the sugar into a fine powder.
    • Transfer powdered sugar in a bowl.
    • Add 2 tbsp of dessicated coconut and mix well.
    • Now add milk gradually to make it pourable.
    • Spread over the cake with the help of a spoon.
    • Sprinkle some dessicated coconut.
    • egg less semolina coconut cake is ready.

    Notes

    1. This cake can be made in any cake tin, not necessarily bundt pan.
    2. If you are using bundt pan, grease it nicely.
    3. Maida can be replaced with whole wheat flour, though we personally haven't tried.
    4. Prefer to use dessicated coconut instead of fresh grated coconut. Fresh coconut is having a moisture which can cause imbalance to the measurement of ingredients.
