Ingredients
  

1 cup = 200 ml

    For making rice

    • 1 cup rice
    • 1 tsp oil
    • 4-5 cup water

    For making veg fried rice

    • 2 tbsp oil
    • 1 tsp garlic crushed
    • 1/2 tsp black pepper powder
    • 1 tbsp soya sauce
    • 2 tbsp white vinegar
    • salt as per taste

    vegetables of your choice (we used the following)

    • 1/4 cup spring onion whites
    • 1/4 cup spring onion greens
    • 1/4 cup cabbage
    • 1/4 cup capsicum
    • 1/4 cup peas
    • 1/4 cup carrot
    • 1/4 cup green beans
    • 2 tnsp coriander leaves

    Instructions
     

    Preparation of rice

    • wash the rice & soak them for about 30 minutes.
    • take water in a pan and add oil in it.
    • place it on high flame for boiling.
    • drain water from the soaked rice and add the rice in the boiling water.
    • let the rice cook.
    • when the rice are 95% cooked, switch off the flame.
    • sieve the cooked rice and then spread the rice in some wide plate or tray.

    Making veg fried rice

    • take a kadai or wok and add oil in it.
    • add crushed garlic and saute.
    • add spring onion whites and saute them too.
    • now add all the vegetables mentioned in the ingredients list. mix well.
    • add salt according to your taste.
    • cover with a lid and let the vegetables cook for about 5 minutes leaving them little crunchy.
    • after the vegetables are cooked, add black pepper, soya sauce and vinegar. mix well.
    • finally add cooked rice and gently but properly mix so that everything incorporates well with each other.
    • veg fried rice are ready. serve hot with manchurian or paneer chilli or the way you like.

    Notes

    1. the key to success of this recipe lies in the use of correct type of long grained non-sticky rice. assure that the cooked rice does not have any lumps in it and each grain is separated properly.
    2. to give it a perfect chinese flavour, add celery instead of coriander leaves. no issues if you don't have celery.
    3. while adding salt, you need to keep few things in mind. one, as already mentioned, soya sauce too has salt. so add salt wisely. secondly it depends on the plan you have made as to how to serve veg fried rice. if serving with manchurian or paneer chilli, need to add less salt and if serving alone, then add salt accordingly.
    4. rice should be cool completely before adding to vegetables otherwise they will become mushy.
    5. choice of vegetables is purely yours
    6. if you have some leftover plain rice, this recipe is the best makeover for them.
