Meethe Chawal | sweet rice recipe with step wise pictorial method.

 

Meethe Chawal (sweet rice) is an amazing sweet delight which is usually made on the day of Basant Panchami, which is a famous festival when Saraswati, the goddess of intellect, learning and wisdom is worshiped.

This celebration is specially associated with the yellow colour because it holds a special meaning for this celebration as it signifies the brilliance of nature and the vibrancy of life.

People not only dress in yellow but they also prepare some sweets in yellow colour. I had made it on that very day but don’t know how I skipped uploading the same. But following the principal of better late than never, I am sharing the recipe of Meethe Chawal now.

These sweet rice are flavoured with saffron strands and a bit of yellow food colour, which gives it a vibrant colour and mild fragrance.

In our city Jammu, its a traditional dish during weddings. Meethe chawal are made on a particular day called “Saant”, an afternoon lunch on wedding day. There’s a fixed menu of saant which includes Plain rice, Ambal, chana da, Rajma and meethe chawal. nothing more nothing less is allowed.

Step wise pictorial recipe of meethe chawal

1. Wash rice 2-3 times and soak them for 30 minutes.

2. Add ghee in a pressure cooker.

3. When ghee melts, add coconut, almonds, cashews, raisins, black pepper and fennel seeds.

 

4. Saute till dry fruits gather some brownish colour.

5. Add sugar and water.

6. Also add saffron, cardamoms and yellow food colour. Mix.

7. Lastly add rice after draining water from them.

8. Put a lid and pressure cook for 3 whistles.

9. Let the pressure release on it’s own and meethe chawal are ready.

NOTE

  1. You can increase or decrease the quantity of sugar as per your requirement. Also you can adjust the intensity of colour as per your liking. For us, this much of sugar was a perfect balace.
  2. If you don’t have both Saffron and yellow food colour, just put ½ tsp spoon of ghee in a pan on low flame and add pinch of turmeric (haldi) in it. Be careful, haldi shouldn’t burn. Add it to the rice.

Ingredients
  

  • 1 Cup rice (200 gram)
  • 2 tbsp desi ghee
  • 3/4 cup sugar (185 gram)
  • 2 tbsp dry coconut (cut into slivers)
  • 2 tbsp almonds (chopped)
  • 2 tbsp cashews (chopped)
  • 2 tbsp raisins
  • Few strands of saffron
  • Few drops of yellow food colour
  • 1/4 tsp black pepper corns
  • 1 tsp fennel seeds
  • 2 green cardamoms (crushed)
  • 2 cup water

Instructions
 

  • Wash rice 2-3 times and soak them for 30 minutes.
  • Add ghee in a pressure cooker.
