WHAT IS RAITA?

 

Raita is a yogurt/dahi based side dish/condiment from the South Asian cuisine and is so versatile that you can add numerous food items, herbs and spices in it and you have the liberty to make it either sweet or savory.

Well known for its cooling effects, it may incorporate raw to cooked vegetables, fruits, cucumber, mint, coriander and so on.

Most popular and common raita recipe in india is Boondi Raita made with fried droplets of gram flour batter. However the list is endless.

DRY FRUIT RAITA

 

Dry fruit raita is not much common but this is one of the most tastiest raita I have ever cherished. Raita is usually served with meal as a side dish but it was so delicious and we all finished it without waiting for the meal. Though it is just named as raita, but it is nonetheless a dessert.

I ate this raita for the first time in my office during the lunch break when one of my colleague brought it in his tiffin. Thank you Vikrant Sir for introducing me to such a delicious variant of raita, though I have made slight changes in my recipe.

I have dry roasted the almonds, cashews, walnuts and sesame seeds instead of ghee roasting.

Further, I have added saffron, rose petals and black salt which were not part of the original recipe.

SKIPPABLE AND NON SKIPPABLE INGREDIENTS

 

As earlier said, raita is so versatile that you may add or subtract anything as per your liking. In the present recipe also, you can add dry fruits of your choice and not necessarily the 3 mentioned.

If cream is not available to you, safely add malai collected over the surface of boiled milk.

Saffron and rose petals can be avoided though every ingredient has a roll to play in enhancing the flavours and aroma of dish.

But the ingredients without which, the taste of raita was not lifting were banana and black salt.

If you have watched the video of this recipe, you must have noticed that I have added banana and black salt at the end.

The reason is that we had decided not to add these 2 ingredients and wanted to keep it purely dry fruit based instead of any fruit.

But the taste of raita wasn’t appealing to us and this is only after the addition of banana and black salt, taste took a shoot.

Step wise pictorial recipe of Dry fruit raita recipe

 

  1. Dry roast almonds, walnuts and cashews together on low flame till they slightly turns golden.
  2. Likewise dry roast sesame seeds on low flame till they turn light brown in colour.
  3. Take a banana and mash it well.
  4. Add curd in a bowl and put all the ingredients i.e. powdered sugar, milk, cream/malai, dry rose petals, saffron, salt, black salt along with roasted dry fruits, sesame seeds and mashed banana. Mix well.
  5. Taste a bit and adjust the seasoning, if needed.
  6. Dry fruit raita is ready.

NOTES

  1. Make sure curd shouldn’t be sour.
  2. Quantity of sugar depends on the fact how sweet your banana is and how much sweet you want to keep your raita.
  3. Granulated sugar can also be added but powdered one gets dissolved in no time.

Ingredients
  

  • 2 cup curd/Yoghurt chilled
  • 1 banana ripe
  • 4 tbsp powdered sugar
  • 1/4 cup milk
  • 2 tbsp cream/malai
  • 2 tbsp walnuts roughly chopped
  • 2 tbsp almonds roughly chopped
  • 2 tbsp cashews roughly chopped
  • 2 tbsp dry rose petals
  • Pinch of saffron
  • 1 tsp sesame seeds
  • 1/2 tsp salt
  • 1/2 tsp black salt
